Free-range ducks from local farms in the South-West of France
We only cook ducks from the South-West of France that have been awarded theIGP Canard à Foie Gras du Sud-Ouest. The Protected Geographical Indication (PGI) is an official European quality label that guarantees the origin and characteristics of a product. This quality label assures you that every duck processed at Esprit Foie Gras has been raised, prepared and packaged in the South-West of France. What's more, PGI duck rearing must comply with strict specifications monitored by government-approved certifying bodies. These specifications include the following:
- free-range rearing of ducks for at least 81 days, exclusively in the South-West (Chalosse, Gascony, Gers, Landes, Périgord, Quercy)
- feed made with GMO-free corn from the South-West of France
The question of animal welfare is thus at the heart of the PGI's considerations. At Esprit Foie Gras, our duck products come from farms that respect animals and our traditions.
