Fresh hearts from free-range Gers ducks
Enjoy grilled on a skewer or with parsley.
Cœurs de canard du Gers is a culinary specialty from southwest France, more precisely from the Gers region in Armagnac country. This dish features pieces of duck, mainly the heart, which is cooked in a flavorful way, often in a traditional recipe.
As the Gers is a region renowned for its duck farming, particularly for the production of foie gras, duck heart is one of the most popular local products. This dish can be prepared in a variety of ways: grilled, pan-fried or stewed, and is often accompanied by seasonal vegetables or potatoes.
A popular way to prepare it is to brown the duck hearts in a pan with garlic, shallots, herbes de Provence and sometimes a little white wine or Madiran (local red wine) to deglaze. Duck hearts are tender and have a rich flavor, a little more pronounced than that of magret, and pair perfectly with typical regional dishes such as pommes sarladaises or lentils.
Duck hearts from the Gers are also a prized ingredient in pâtés and terrines, or in mixed salads, where their unique flavor and delicate texture add real character to the dish.
If you're lucky enough to try this dish, it's a great way to discover the authentic flavors of southwestern France!
