Ingredients for 2 persons :
- 1 nice duck breast from Gers from ESPRIT FOIE GRAS
- 2 apples
- 1 garlic clove
- 1 large tablespoon honey
- 2 tablespoons cider vinegar
- Thyme Salt and pepper.
Preparation:
- Heat a frying pan and lightly slit the skin of the duck breast, then cook it skin-side down in the pan.
- Cover and cook for 10 minutes, then turn over and cook for a further 5 minutes or so.
- Set aside and wrap in aluminium foil. Reserve a little duck fat, peel the garlic and mince.
- Brown the garlic and thyme in the duck fat.
- Deglaze with a little water, honey and vinegar.
- Remove the cooking juices and adjust the seasoning if necessary.
- Peel the apples, cut into quarters and fry for a few minutes in the reserved duck fat.
- All that's left to do is dress and enjoy.
